Heat the chicken broth in a medium saucepan, covered, over medium heat until it simmers. Add the saffron, taste the broth, and season with salt if needed. Pour the hot broth over the rice. Cover the dish tightly with foil and bake until almost all the liquid has been absorbed and the rice is tender, about 20 minutes.

Add the olive oil to a large, heavy frying pan over medium- high heat and, when the oil is very hot but not smoking, add the turkey. Cook, turning frequently, until the turkey is seared on all sides and very lightly browned, only 2 to 2½ minutes. Remove to a platter. 6. Add the chicken broth to the same frying pan over medium- high heat and, using a whisk, deglaze the pan by scraping any browned bits on the bottom into the broth. Add the balsamic vinegar and honey and cook, stirring, until the mixture has reduced by half, 5 minutes or longer.
